  • Commenced 1972 apprenticeship in cooking  Kelvin Hotel Invercargill New Zealand  4 years
  • Left New Zealand  1976  to work in Australia
  • Worked for Poon Bros in Western Australia  as a Cook  ( Dampier )in a mining Camp cooking for 1000 workers
  • Went traveling through Asia and then on to Europe  1976- 1977
  • Worked in England 1977  -1983 In various  Hotels in London and  managed a  wine bar in Barker Street London
  • Worked as Executive Sous Chef in the Cumberland Hotel Marble Arch. One of the old grand hotels in London with over 900 rooms
  • Returned to Sydney  1983  Started as a Sous Chef at the Menzies Hotel and then moved to the Sydney Opera House  as a Sous Chef in the Bennelong  and became Executive  Chef  at the Opera House for 10  years
  • Became an Australian Citizen 1985
  • While still at the Opera House  ran the kitchens at the Art Gallery ,Power House  Museum  and Wharf 7  Theatre  Restaurant.
  • Trained  & coached more that 20 apprentices throughout  his time at the Opera House
  • Moved out of kitchens into catering management in 1993.
  • Completed a management course at the Australian Institute of Management
  • Worked with an international commercial catering company as   General Manager of food services catering to a wide range of clients.
  • Moved into the Club industry and have worked as Catering Manager  Food & Beverage Manager and Operations Manager in various  large Clubs in Sydney including Revesby Workers and West  Leagues Ashfield.
  • Traveled to the USA to  The  National Restaurant  show and exhibition in Chicago
  • Currently working since 2004 working at Cabra Vale Ex Active Servicemen’s Ltd Club at Canley Vale as Catering Manager.
  • Promoted to Food and Beverage Manager in 2008.
  • Cabra Vale Ex- Active Servicemen’s Ltd amalgamated with Campbelltown RSL in October 2009. Increased responsibility for all Food & Beverage at both Clubs.
  • Encourages work experience programs in the workplace with young people and speaks regularly to different High Schools  students about the importance   of the work experience
  •  Invited to join the Board of Fairfield Business Partnerships  ( Known as South West Connect ) (member since 2009) Involved in community – school based work experience programs 
  •  Promoted in December 2010 to Operations Manager
